Small, delicate evergreen tree to 4m tall with aromatic foliage. Clusters of small white flowers are followed by decorative red/black berries. The leaves have a strong curry aroma and a distinct, spicy curry-like flavour and are highly valued as seasoning in Indian and Sri Lankan cooking.
For best results, plant in a sunny position in well drained soil enriched with well decomposed compost and mulch well. Hardy but frost sensitive and responds well to pruning. More suited to warm sub/tropical climates, but will grow in most places.
Use the fresh leaves in curries by frying in oil before added the rest of your ingredients. You can also use the powdered leaves in marinades and dressings.
